
The municipal markets of Madrid get ready with the parpusa and the carnation to celebrate San Isidro, sharing a taste of the city’s gastronomic richness and its most delicious traditions.
What does San Isidro taste like? Rosquillas, callos, and mollejas. At the Municipal Market of Chamberí, a group of talented chefs and pastry chefs from ACYRE (Association of Chefs and Pastry Chefs of Madrid) and ASEMPAS (Association of Artisan Entrepreneurs in the Pastry Sector) have prepared a 100% traditional route inviting everyone to enjoy the best of Madrid’s gastronomy.
With 80 affiliated establishments throughout the Community of Madrid, there is no excuse not to try the famous saint’s rosquillas. «We are delighted that people do not limit themselves to a single establishment, but visit several and make their own classification among family and friends,» says a chef from ACYRE.

This celebration brings together 40 restaurants offering traditional dishes such as callos a la madrileña, 19 bakeries with the classic rosquillas in all their variations, 6 bakeries and workshops, as well as 12 cocktail bars presenting special drinks inspired by the traditional culture.
Among the delights that can be tasted are the bastones de San Isidro, an ideal bread to accompany typical meals. Since 2018, several bakeries have maintained this proposal for two weeks a year, offering fresh bread to dip in the tasty meals that characterize this festivity.
Madrid prepares for the 2025 San Isidro Festivities: concerts, chotis, and fireworks
Additionally, the event featured a show cooking where emblematic dishes such as rabo de toro and callos madrileños were not missing. From May 8 to 15, 17 municipal markets in 11 districts will host a variety of festive activities. There will be chotis exhibitions, barrel organ music, free distribution of rosquillas and carnations, vermouth and local wine tastings, as well as wafers.
To add a special touch to the celebration, those dressed in traditional chulapos and chulapas costumes will be rewarded. So, get ready to enjoy the authentic taste of Madrid at this highly anticipated festival!
